The Clos de Bèze parcels in Gevrey-Chambertin

Chambertin-Clos de Bèze is a Grand Cru appellation in the commune of Gevrey-Chambertin, created on 31 July 1937 for red wine only. About 15 ha are in production, and output averages about 500 hl (some 66,500 bottles) a year. The land was given to the monks of the Abbey of Bèze in the year 630, and the Clos is still enclosed by old stone walls.

The soils of its parcels are stony and high in limestone: Bathonian clay-limestone at the top, Bajocian crinoidal limestone and marl halfway down.

How Rousseau makes Clos de Bèze

Across the domaine, the vines are Pinot Noir, pruned in single Guyot and cropped at 30 to 40 hl/ha. Fermentation takes place in open stainless-steel vats for about 18 to 20 days, with pumping over and punching down. About 90% of the grapes are destemmed. The wine then goes by gravity into Allier oak barrels, and all of the estate’s wines are aged for 18 months with two rackings.

The estate ages Clos de Bèze in 100% new oak on average.
