Where the Chambertin vines of the domaine stand

The Chambertin appellation has 13.14 ha in production and yields an average of 449 hl a year, about 59,700 bottles. The name comes from “Champ de Bertin”, the field of a man who planted vines next to the monks’ Clos de Bèze. The domaine’s Chambertin sits in an estate of 15.33 ha, of which 8.51 ha are Grand Cru.

The domaine holds 2.55 ha of Chambertin. The wine comes from three east-facing parcels and a fourth, Larrey, at the edge of the woods, which can only be worked with a horse and plough. Armand Rousseau bought the domaine’s first Chambertin vines; his son Charles added more later.

How Rousseau ferments and ages its Chambertin

The estate ferments in open stainless-steel vats for about 18 to 20 days, with pumping over and punching down. About 90% of the grapes are destemmed. After pressing, the wine goes by gravity into oak barrels from the Allier forest, where malolactic fermentation takes place naturally. Chambertin is aged in 100% new oak, and the estate ages its wines for 18 months before bottling, usually in April.
