How Grivot makes its Richebourg

In the current winemaking, grapes are fully destemmed, cold maceration lasts one to two days and fermentation is spontaneous. Ageing is 15 months in 228-litre barrels (45% new for the 2023), then 2 months in tank. The estate uses 40 to 45% new oak for its Grand Crus.
