Cellar practice at Mouton today

Grapes are hand-picked into open baskets and hand-sorted on vibrating tables after destemming. The vat room holds 44 oak vats and 20 stainless-steel vats and works by gravity feed.

The estate matures the grand vin in new oak barrels for about twenty months and fines it with egg white during maturation. All the wine has been bottled at the château since 1924.

Pauillac and the Mouton vineyard

In 1855 Mouton was classified as a second growth; a decree of 21 June 1973 made it a first growth.

Pauillac makes still red wine only, on gravel terraces beside the Gironde, with Cabernet Sauvignon as the main grape. The average vine age is around 44 years, on deep gravelly soil planted at 10,000 vines per hectare. More wines from the region are in the Bordeaux category.
