Henri Boillot, Meursault: from Domaine Jean Boillot to Guillaume’s reds

Domaine Henri Boillot is based in Meursault and specialises in Puligny-Montrachet for white wines and Volnay for red wines. The family domaine dates to 1885. Henri Boillot began as its winemaker in 1975, took over the whole estate in 2005 and gave it his own name; it had been Domaine Jean Boillot. His son Guillaume joined in 2008 and specialises in the red wines.

The estate has limited its interventions in the vineyard since the 1990s. The Les Fremiets parcel is worked without herbicides or insecticides, with regular ploughing, and is harvested by hand.

The estate destems the grapes and gives them a cold pre-fermentation maceration. Vatting lasts about four weeks, with regular punch-downs and no pump-overs. The wine then spends 18 months in 350-litre barrels, a mix of new and one-year-old, and is bottled without racking, fining or filtration.
