The name comes from Georges Noëllat, a nephew of Charles Noëllat. In 1991 the estate passed to his daughter Maria Theresa and her husband Jacques Cheurlin, a Champagne grower. She ran it until 2009 and then handed it to her grandson Maxime.

How Georges Noellat works its red wines
The domaine harvests by hand. Grapes are usually 100% destemmed and go through a cold maceration before fermentation with native yeasts. New oak ranges from 30% to 100% depending on appellation and vintage, and ageing lasts 14 to 20 months. The wines are generally bottled without fining or filtration.
