POBERT PARKER « Le Echezeaux du Dessus 2009 est beaucoup plus introspectif et difficile à déchiffrer que la Chapelle à ce stade. Des tanins soyeux et élégants encadrent l’essence de baies rouges, pétales de rose, menthe et épices douces. C’est un vin totalement captivant et élégant qui a juste besoin de temps. Pourtant, son potentiel ressort magnifiquement de temps en temps. Maturité anticipée : 2019-2029.
Cecile Tremblay est l’une des jeunes vigneronnes émergentes de Bourgogne. J’ai été très impressionné par tous les vins que j’ai dégustés. Tremblay exploite quatre hectares de vignobles à travers onze appellations. Elle privilégie de longues macérations (les 2009 ont passé 30 jours sur les peaux) sans chaptalisation ni acidification. Le pourcentage de grappes entières varie d’un vin à l’autre et peut atteindre 100% au niveau grand cru. Les vins restent sur lies sans soutirage jusqu’à ce qu’ils soient préparés pour la mise en bouteille. Le chêne neuf varie de 20% pour les vins de village à 70% pour les Grands Crus. Ce sont des vins saisissants, mais il y a toutes les raisons de croire que le meilleur est encore à venir de ce petit domaine de haute qualité. »
